This is an absolutely delicious and very healthy alternative to boxed pancake mix pancakes offering the heart healthy benefit of oatmeal and the protein advantage of the cottage cheese and eggs!


1/2 cup rolled oats (raw oats, not instant)
1/2 cup cottage cheese
2 large eggs
1/2 tsp stevia, honey, or maple syrup
1/4 tsp vanilla
1/4 tsp cinnamon
1/4 cup blueberries,  1/2 banana or any other fruit you may want to add
1/2 tsp baking powder
coconut oil or real butter to grease pan


Put rolled oats in food processor and blend oatmeal to a powder. Add remaining ingredients, except fruit, into food processor and blend until batter forms (about 10 seconds). Heat skillet to 300 degrees and grease generously to prevent sticking. Pour batter into hot skillet forming approx 4-inch pancake and add your fruit of choice. Cook until lightly brown and then flip over and cook the other side until lightly brown. Use agave nectar or maple syrup to top your pancakes.

The above made 2 5-inch pancakes which fed two people just fine. Increase above ingredients accordingly for more pancakes.

Blane’s Review – Steph will ask me to make these most weekend mornings. We both love to add sliced bananas, strawberrys, or blueberries to the batter after pouring it in the skillet.
